Ok, you’ve asked for it! Read on for this super-simple low calorie, AND delicious low calorie chicken parmigiana (or parmesan!) recipe that will satisfy any Italian food craving that you may have! If you’re a vegetarian, or just not a fan of chicken, also try-out or low calorie eggplant parmesan recipe.
Serves: 4 (these make great freezer meals portioned out, or simply re-heat for lunch the next day!)
4 Servings of Oven Baked Chicken
1 Can of Low-Fat or Fat-Free Marinara Sauce
1 Cup of Fat-Free Mozzarella Shredded Cheese
1. Prepare the delicious oven fried chicken.
2. Spoon 1/4 cup of the marinara sauce over each piece, and top with 1/4 cup mozzarella.
3. Pre-heat the oven to 450 degrees and watch the oven carefully until the cheese melts. (Make sure to keep an eye on the process; you don’t want your meal to burn or overcook!)
4. Serve with a side of fresh steamed veggies (see below for ideas.) And enjoy!
Optional Sides and Variations:
Steamed Broccoli, asparagus, zucchini, or artichoke hearts with fresh squeezed lemon and oregano
Lower calories: forgo the crispy baked fried chicken and just used steamed chicken breasts.
